Sassy Chef: Back-to-School lunches and snacks

Chef Heather Larican (aka the Sassy Chef) with some easy, back-to-school snack recipes for you kiddo. She also shows us three different ways to use rotisserie chicken for school lunch.

Lemon Blueberry Mug Cake
2 tablespoons natural peanut butter
2 tablespoon coconut flour
1/4 teaspoon baking powder
1 egg
1 1/2 tablespoons coconut oil
1 1/2 tablespoons real maple syrup
1 teaspoon lemon zest or 2 tablespoons lemon juice
Pinch of Himalayan Salt
5-6 blueberries
Whisk everything in a mug except for the blueberries until well-incorporated. Fold in the blueberries. Microwave for 2.5 minutes

Chocolate Mug Cake
1 very ripe medium banana
2 tablespoons peanut butter (or almond butter if allergy is present or for paleo version)
2 tablespoons cocoa powder
2 tablespoons dark chocolate chips
1 teaspoon vanilla|
Whisk everything in mug. Microwave for 2 minutes.
